<li><span data-contrast="auto">For the chocolate layer, place the chocolate and cream in a microwave-safe bowl and heat in bursts of 15 seconds until melted, stirring in between bursts. Set aside until needed. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">For the mascarpone layer, whip the cream until it forms soft peaks. Gently whisk through the mascarpone and vanilla, then fold through the white chocolate.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Combine the coffee liqueur and espresso in a shallow bowl. Swiftly dip the Lady Fingers into the coffee mixture as needed and start layering.</span></li>

Add the butter, lemon juice, sugar and balsamic vinegar and cook, stirring often, for another 20 minutes over low heat until the onions are dark brown and glossy.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">For the filling, mix half the egg with the remaining ingredients until combined.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">To assemble, preheat the oven to 180 °. Line a baking tray with baking paper.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Place the pastry on a lightly floured surface and gently roll out until about 2mm thick and larger than the prepared baking tray. Spread the cream cheese filling over the pastry, leaving a 2 cm border around the edge. Layer the tomato slices and caramelised onion on top.</span><span data-ccp-props="{}"> </span></li>

<li><span data-contrast="auto">Add the shallot (or onion), garlic, ginger, lemongrass, chilli, coriander and season. Mix well, cover and chill until cold. </span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Preheat the oven to 180°C. </span></li>
<li><span data-contrast="auto">Dust the work surface with flour and lay the pastry flat on the counter. </span></li>
<li><span data-contrast="auto">Cut the pastry into 12x30cm </span><span data-ccp-props="{}"> strips.</span></li>
<li><span data-contrast="auto">Add 2-3 Tbsp of the filling down the middle of each puff pastry strip. </span></li>

<li><span data-contrast="auto">Crimp the ends of the pastry with a fork. </span></li>

<li><span data-contrast="auto">For the falafel sliders, place all ingredients, except the oil, in a food processor and pulse until the mixture comes together but still has a grainy texture. Refrigerate for 1 hour.</span><span data-ccp-props="{}"> </span></li>
<li><span data-contrast="auto">Roll the mixture into balls and then flatten into patties the size of the pitas.</span></li>
<li><span data-contrast="auto">Heat oil in a pan and shallow fry patties in batches until crisp and golden, about 5 minutes per side. Drain on paper towel.</span></li>
<li><span data-contrast="auto">Warm the pitas in the oven for 5 minutes.</span></li>

<p><strong>Method  </strong></p>
<p><strong>1.</strong> Tie the chicken legs together and the wings close to the body, using kitchen twine, and place the chicken in a large roasting tray or dish.<br />
<strong>2.</strong> Add the potatoes around the chicken, then season it all.<br />
<strong>3.</strong> Mix the marinade ingredients together and rub into the chicken and potatoes.<br />
<strong>4.</strong> Leave to marinate for at least an hour.<br />
<strong>5.</strong> Preheat the oven to 180°C. Cover the roasting tray with foil.<br />
<strong>6.</strong> Roast for 30 minutes, then remove the foil and roast uncovered for a further 40 minutes, until golden.</p>

<p><span data-contrast="auto"><strong>1.</strong> Place the sprouts in a foil package and top with honey, butter, lemon zest and a sprinkling of salt.<br />
</span><span data-contrast="auto"><strong>2.</strong> Close the foil tightly and place on a braai grid over medium-hot coals. Cook for 15-20 minutes, shaking the package gently every 5 minutes, until the sprouts are tender on the inside and slightly crispy and charred on the outside. </span></p>
<p><span data-contrast="auto">To serve, place the pumpkin on a serving platter and spoon the Brussels sprouts around it. Top with micro herbs, feta, radish slices and lemon peel. This recipe also works perfectly for hollowed-out butternut halves.</span><span data-ccp-props="{}"> </span></p>

<strong>4.</strong> Place a clove in the middle of each diamond until the top of the gammon is completely studded with cloves<br />

<p><b>Makes 9 biscuits</b></p>
<p><strong>INGREDIENTS</strong><br />
<b>1 cup</b><span style="font-weight: 400;"> nutty wheat flour</span><br />
<b>½ tsp</b><span style="font-weight: 400;"> salt</span><br />
<b>⅓ cup</b><span style="font-weight: 400;"> + </span><b>½ tbsp</b><span style="font-weight: 400;"> coconut oil, </span><span style="font-weight: 400;">softened but not melted</span><br />
<b>2 tbsp</b><span style="font-weight: 400;"> honey</span><br />
<b>1 tbsp</b><span style="font-weight: 400;"> cold water</span><br />
<b>½ </b><span style="font-weight: 400;">apple, peeled, cored and grated</span><br />
<span style="font-weight: 400;">Zest and juice of </span><b>¼</b><span style="font-weight: 400;"> lemon</span><br />

<p><strong>METHOD</strong><br />
<b></b><span style="font-weight: 400;"><strong>1</strong>. Combine the flour and salt in a bowl. Add ⅓ cup coconut oil and beat to combine. Add the honey and beat again until it resembles sticky breadcrumbs.</span><br />
<b></b><span style="font-weight: 400;"><strong>2.</strong> Add the water and mix until a soft dough forms. Cover the pastry in cling film and set aside in the fridge.</span><br />
<b></b><span style="font-weight: 400;"><strong>3.</strong> Place ½ tbsp coconut oil, the apple, lemon and orange zest and juice, dried fruit, apricot juice and spices in a pot over medium heat. Bring to the boil, then reduce heat and simmer, stirring occasionally until most of the liquid has been absorbed, about 8 min.</span><br />
<b></b><span style="font-weight: 400;"><strong>4.</strong> Mix the cornflour with 2 tsp cold water to make a paste, then stir it into the hot fruit. Set aside to cool slightly.</span><br />
<b></b><span style="font-weight: 400;"><strong>5.</strong> Preheat the oven to 160°C and line a baking tray with baking paper.</span><br />
<b></b><span style="font-weight: 400;"><strong>6.</strong> Roll the biscuit dough out and, using a 6 cm cookie cutter, cut circles out of the dough.</span> <span style="font-weight: 400;">Divide the circles into two batches. Using a smaller decorative cutter, cut a shape out of the middle of one batch of circles, creating the ‘window’ biscuit.</span><br />
<span style="font-weight: 400;"><strong>7.</strong> Bake all the circles for 10–12 minutes until golden brown.</span><br />
<b></b><span style="font-weight: 400;"><strong>8.</strong> Spoon 1 tbsp of the filling on to each of the bottom biscuits and sandwich closed </span><span style="font-weight: 400;">with the top decorative ‘window’ biscuit.</span></p>

<span style="font-weight: 400;">Juice of <strong>1</strong> orange </span><br />
<span style="font-weight: 400;">Juice of  lemon </span><br />

<span style="font-weight: 400;"><strong>1  cups</strong> cream cheese </span><br />
<span style="font-weight: 400;"><strong>4 tbsp</strong> icing sugar</span><br />
<span style="font-weight: 400;"><strong>1 tsp</strong> vanilla essence </span><br />
<span style="font-weight: 400;"><strong>2 cups</strong> whipped cream </span><br />
<span style="font-weight: 400;"><strong>1 cup</strong> strawberries, sliced </span><br />
<span style="font-weight: 400;"> cup flaked almonds, toasted</span></p>
<p><b>METHOD</b><br />
<strong>1.</strong> Make jelly by combining the wine, sugar, water, and orange and lemon juice in a pot over medium heat.<br />
<b></b><span style="font-weight: 400;"><strong>2.</strong> Bring to a simmer and stir until the sugar has dissolved.</span><br />
<b></b><span style="font-weight: 400;"><strong>3.</strong> Add the scored peaches and poach for 15 minutes.</span><br />
<b></b><span style="font-weight: 400;"><strong>4.</strong> Remove the peaches and whisk the gelatine into the poaching liquid until dissolved. Strain and refrigerate for 1 hour.</span><br />
<b></b><span style="font-weight: 400;"><strong>5.</strong> Pour half of the jelly into the bottom of your trifle dish. Keep the rest at room temperature.</span><br />
<b></b><span style="font-weight: 400;"><strong>6.</strong> Peel and slice the cooled peaches and add half of them, along with half of the strawberries, to the jelly in the trifle bowl. Refrigerate until set.</span><br />
<b></b><span style="font-weight: 400;"><strong>7.</strong> Arrange the Madeira slices in an even layer on top of the jelly and brush with 20 ml of the brandy.</span><br />
<b></b><span style="font-weight: 400;"><strong>8.</strong> Whip the cream cheese, icing sugar, vanilla essence and the remaining brandy together, until smooth and fluffy. Fold through the whipped cream.</span><br />
<b></b><span style="font-weight: 400;"><strong>9.</strong> Spread half of the cream mixture in an even layer on top of the Madeira layer and refrigerate for 15 minutes.</span><br />
<b></b><span style="font-weight: 400;"><strong>10.</strong> Pour the remaining jelly on top of the cream layer, and add the other half of the poached peaches and sliced strawberries. Refrigerate until fully set.</span><br />
<span style="font-weight: 400;"><strong>11.</strong> Serve the trifle topped with extra whipped cream and decorated with peach slices, strawberries and almonds.</span></p>
<p><em><span style="font-weight: 400;"><strong>Tip:</strong> Making your own jelly can be so rewarding, but if you are in a rush, feel free to use any of your favourite jelly packets in this dish. Using tinned peaches is also a great way to speed up the process, but without compromising on flavour.</span></em></p>

4 tbsp vegetable oil<br />
½ onion, thinly sliced<br />
2 cloves garlic, finely chopped<br />
2 cm piece ginger, peeled and finely chopped<br />
1 red chilli, finely sliced<br />
3 cups Swiss chard, torn<br />
1 red pepper, deseeded and thinly sliced<br />
2 carrots, cut into thin matchsticks<br />
½ head broccoli, cut into small pieces<br />
½ cup soy sauce<br />
<em>To serve</em><br />
4 packets instant noodles, cooked and drained<br />
3 tbsp chilli oil (optional)<br />
¼ cup micro herbs (optional)</p>
<p>METHOD<br />
1. Heat the oil in a large pan over medium heat. Add the onion, garlic, ginger and chilli and fry for 3–5 minutes until the onion is cooked.<br />
2. Increase the heat to medium-high and add the Swiss chard, pepper, carrots and broccoli.<br />
3. Stir-fry for 3–4 minutes until the vegetables are cooked but still crunchy.<br />
4. Add the soy sauce to the vegetables and heat through.<br />
5. <em>To serve</em>, toss the noodles with the vegetables and soy sauce and serve hot with chilli oil on the side. Garnish the noodles with fresh micro herbs for an extra special touch.<br />

1 tin tomato braai relish<br />
1 tin red kidney beans, rinsed and drained<br />
<em>To serve</em><br />
⅓ cup mayonnaise<br />
3 handfuls lettuce leaves<br />
1 tin whole kernel corn<br />
⅓ cup grated Cheddar<br />
½ cup coriander</p>
<p>METHOD<br />
1. Preheat the oven to 180˚C and line 6 small square heatproof casserole dishes with baking paper.<br />
2. Press the wraps into the lined dishes and brush with a bit of oil. Bake for 10–15 minutes until golden brown and crispy.<br />
3. While the wraps are cooking, heat the remaining oil in a pan over medium heat.<br />
4. Add the onion and carrot and cook for 7 minutes until the onion is soft and translucent.<br />
5. Add the beef mince and paprika and stir-fry until cooked.<br />
6. Add the tomato braai relish and beans, heat through and season with salt and pepper to taste.<br />
7. <em>To serve</em>, spread the inside of each taco bowl with a thin layer of mayonnaise and line with lettuce leaves. Spoon some corn and mince into each bowl and top with grated cheese and fresh coriander.<br />

<p>INGREDIENTS<br />
4 small baguettes, halved lengthways<br />
1 clove garlic, peeled and cut in half<br />
cup tomato puree<br />
2 tsp dried mixed herbs<br />
2½ cups grated Cheddar<br />
8 slices ham<br />
½ pineapple, peeled and chopped<br />
1½ cups sliced mushrooms<br />
<em>To serve</em><br />
¼ cup basil</p>
<p>METHOD<br />
1. Preheat the oven grill to high.<br />
2. Place the baguette halves cut side up on a baking tray and grill for 5 minutes until just toasted. Remove from the oven and rub with the garlic clove.<br />
3. Spread 1 heaped tbsp tomato puree on to each half and sprinkle with dried herbs.<br />
4. Sprinkle half the grated cheese on to each baguette and divide the ham, pineapple pieces and sliced mushrooms between each baguette. Top with the remaining grated cheese.<br />
5. Place the baguettes under the grill until the cheese is melted and bubbling, about 5–6 minutes.<br />
6. Serve hot topped with fresh basil.<br />
