4 mouthwatering burger recipes 

From a Southern fried chicken burger to a yummy ostrich burger, try one (or all) of these four tasty burger recipes. 

Bagel breakfast burgers 

Makes 4 // Cooking time: 20 minutes 

 

Ingredients 

4 bagels, halved
Vegetable oil 
4 eggs
4 beef burger patties
200g micro rocket
2 avocados, sliced 

Method 

  1. Using a small 4cm cookie cutter, make the hole in the bagel tops slightly bigger to make a ‘nest’ for the eggs.
  2. Heat some oil in a pan over low-medium heat and add the 4 bagel tops, cut-side down. 
  3. Crack an egg into each bagel hole, pop the pan lid on and cook for about 5 minutes, until the eggs are done. Remove and set aside.
  4. 4. Increase the heat to high and fry the patties for 4 minutes on each side. Lower the heat, cover and cook the patties for another 5 minutes.
  5. 5. Arrange rocket on the bottom halves of the bagels. Top with a patty and avocado slices, and close with the top (egg-filled) half of the bagel.

Southern fried chicken burgers with slaw 

Makes 4 // Cooking time: 30 minutes + marinating 

Ingredients  

2 cups buttermilk
2 Tbsp Cajun spice
4 chicken breasts
2 cups flour
1 Tbsp baking powder
1 Tbsp garlic powder
Vegetable oil, for frying
4 burger buns 

For the slaw 

½ green cabbage, thinly sliced
3 spring onions, thinly sliced
3 celery stalks, thinly sliced
½ bulb fennel, thinly sliced
2 jalapeños, thinly sliced
2 Tbsp mayonnaise
1 lime, zested and juiced
2 Tbsp roughly chopped coriander
2 tsp red wine vinegar 

Method 

  1. Mix together the buttermilk and Cajun spice. Add the chicken, tossing it to coat well, and marinate for at least 1 hour.
  2. Combine the flour, baking powder and garlic powder in a large bowl.
  3. Dip the marinated chicken into the coating, then into leftover marinade and into the coating again.
  4. Heat enough vegetable oil in a pan to shallow-fry, and cook coated chicken breasts for 4 minutes per side. 
  5. Transfer to a baking tray lined with foil and bake at 180°C for 10 minutes.

For the slaw 

  1. Combine all the ingredients and refrigerate for at least 20 minutes before assembling your burgers.

To assemble 

  1. Halve the burger buns and toast them.
  2. Top four burger bun halves with a piece of fried chicken, followed by a generous heap of slaw. 
  3. Top with the other half buns and enjoy!

20-minute ostrich burgers with fried onions 

Makes 4 // Cooking time: 20 minutes 

Ingredients 

4 ostrich patties 
4 paninis
4 slices cheese
8 gherkins, sliced
125g potato or veggie chips, for serving 

For the fried onions 

½ cup flour
¼ tsp baking powder
Salt and pepper
1½ Tbsp milk
½ egg, beaten
½ onion, thinly sliced
Vegetable oil, for deep-frying 

For the pesto sauce 

⅓ cup basil pesto
⅓ cup plain yoghurt
3 Tbsp mayonnaise
4½ Tbsp chopped rocket
½ tsp chilli flakes
1⅓ cups shredded cabbage 

Method 

For the fried onions 

  1. Mix flour and baking powder together and season.
  2. 2. In a separate bowl, whisk milk and egg together.
  3. Dip the onion slices in the egg mixture and then coat in flour.
  4. Heat oil in a pot over medium heat, and fry onions until crispy and golden brown.

To assemble burgers 

  1. Fry ostrich burgers according to your preference.
  2. Mix the pesto sauce ingredients together.
  3. Cut paninis in half lengthwise. Spoon some pesto sauce onto one half.
  4. Top with a burger patty, cheese, gherkins and crispy onions.
  5. Close the sandwich and serve with chips on the side.

Maple bacon beef burgers with Camembert 

Serves 4 // Cooking time: 45 minutes 

Ingredients 

500g beef mince
1 Tbsp breadcrumbs
2 tsp dried thyme
400g streaky bacon, chopped
2 cloves garlic, grated
1 tsp paprika
2 cups apple juice
½ cup maple syrup 

To assemble 

4 burger buns
1 cup baby spinach
1 wheel Camembert, sliced 

Method 

  1. Mix the mince, breadcrumbs and thyme by hand. Divide into 4 portions and shape each into a 3cm-thick burger patty.
  2. Heat some oil over high heat and fry the burgers for 5 minutes on each side. 
  3. Lower the heat, season, cover with a lid and cook for 10 minutes.
  4. Fry the bacon over high heat for 5 minutes, until crispy. 
  5. Lower the heat and add garlic and paprika. Fry for 2 minutes, until fragrant.
  6. Pour in apple juice to deglaze the pan, then add maple syrup and reduce heat to simmer for 15 minutes.

To assemble 

  1. Halve the burger buns and toast them.
  2. Top the bottom half of the buns with baby spinach, followed by a beef patty and slice of Camembert. 
  3. Finish with a dollop and drizzle of maple bacon.
