Gather round because these brownie ice cream sandwiches is perfect to share around the braai after a delicious meal with the family.
MAKES 9 // COOKING TIME 3 hours 10 min
INGREDIENTS
For the brownies
½ cup vegetable oil
1 tbsp apple cider vinegar
¼ cup water
1 cup sugar
1½ cups cake flour
¼ cup cocoa powder
½ tsp bicarbonate of soda
1 tsp baking powder
½ tsp salt
For the cherry ice cream
2 cups cherries, pitted
1 tub vanilla ice cream, softened
For the chocolate ganache
100 ml heated cream
100 g white chocolate, melted
METHOD
For the brownies
1. Preheat oven to 180°C. Grease and line a baking sheet.
2. Combine all the wet ingredients. Add all the dry ingredients and mix until fully incorporated.
3. Spread the batter into the prepared tray in a thin layer.
4. Bake for 10 minutes, allow to cool and then cut in half.
For the cherry ice cream
1. Fold the cherries into the ice cream. Set aside.
For the ganache
1. Whisk together the cream and white chocolate until well combined. Set aside.
To assemble
1. Line a deep square container that will fit one of the brownie bases snugly, or create a container from tin foil that will serve the same purpose.
2. Place one brownie base on the bottom and spread the ice cream over evenly. Top with the second base. Freeze until set, at least 3 hours.
3. Pour over the ganache, slice into squares and serve immediately.
