Celebrate the season of fruit and fresh flavours with delicious summer recipes such as these summer bagels and Mediterranean brown rice bowls.
Summer bagels
SERVES 4
INGREDIENTS
Handful mint, finely chopped
1 tsp lemon zest
250 g smooth cottage cheese
4 bagels, halved and toasted
1 avocado, thinly sliced
1 cup strawberries, sliced
4 radishes, thinly sliced
Micro herbs and edible flowers, to garnish
METHOD
1 Mix together the mint and lemon zest to make a gremolata.
2 Spread the cottage cheese generously onto the bagels.
3 Top each bagel with avo, strawberries and radishes. Garnish with micro herbs and edible flowers.
Mediterranean brown rice bowls
SERVES 4
INGREDIENTS
For the chickpeas
1 tin chickpeas, drained
1 tbsp olive oil
1 tsp cumin
½ tsp paprika
½ tsp chilli flakes
For the Mediterranean salad
2 cups cherry tomatoes, halved
½ red onion, thinly sliced
½ cup pitted black olives, halved
½ cucumber, chopped
2 tbsp olive oil
1 tbsp red-wine vinegar
1 tsp dried origanum
2 cups brown rice, cooked according
to packet instructions
1 avocado, sliced
1 cup tzatziki
½ cup crumbled feta
2 tbsp sprouts
METHOD
For the chickpeas
1 Preheat oven to 200°C. Line a baking tray.
2 Toss the chickpeas with the olive oil, cumin, paprika and chilli flakes. Season well.
3 Roast for 25–30 minutes, until crispy.
For the Mediterranean salad
1 Assemble the cherry tomatoes, onion, black olives and cucumber in a bowl.
2 Whisk together olive oil, vinegar and origanum and season. Drizzle over the salad.
3 Divide the rice between 4 bowls and top with the chickpeas, salad, avocado and spoonfuls of tzatziki.
4 Sprinkle over the feta and garnish with sprouts.
