A great way to use up stale croissants. This viral sandwich is a vessel for endless toppings.
Rolled croissant sandwich
Serves 1
Ingredients
2 croissants
2 Tbsp butter
Glug oil
2 Tbsp honey, plus extra to serve
¼ coil chorizo, sliced or
2-3 slices streaky bacon
Salt and milled black pepper
2 Tbsp plain cream cheese
Small handful fresh rocket
¼ cup grated Cheddar or mozzarella
2 Tbsp tomato chilli jam or onion marmalade
Method
- On a chopping board, use a rolling pin to flatten croissants.
- Heat butter and oil in a pan.
- Fry croissants for 2-3 minutes per side until crispy. Drizzle with honey and fry for another minute. Remove from pan.
- Fry chorizo or bacon in same pan for about 5-6 minutes with an extra glug of oil. Season and set aside.
- Spread cream cheese over one croissant and top with rocket, chorizo or bacon, cheese and relish. Top with second croissant.
- Fry sandwich in a clean hot pan for 3-4 minutes or until cheese melts. Drizzle with honey just before serving.
