Chocolate for Dinner

Chocolate is more versatile than you think and we’re making the argument – Dessert for dinner!

Chocolate malva pudding with apricot ganache 

Prep time 25 min 

Cook time 30 min

Serves 6 

INGREDIENTS

For the pudding

2 cups milk

2 tsp bicarbonate of soda

2 tsp baking powder

2 cups flour

1 cup white sugar

tsp salt

2 eggs

2 tbsp vinegar

4 tbsp apricot jam

For the sauce

1 tin evaporated milk

cup sugar

Vanilla essence or seeds

 

For apricot ganache

100g dried apricots, chopped

200g dark chocolate, melted

200 ml cream, heated

METHOD

For the pudding

1 Preheat the oven to 160°C. 

2 In a bowl, mix together the milk and bicarb. In a separate bowl, mix together the remaining ingredients, and then add the milk mixture and stir until smooth. 

3 Pour the batter into a baking tray or individual baking ramekins, filling them ¾ of the way, and bake for 30 minutes until golden. 

For the sauce

1 Heat the ingredients in a saucepan; pour over pudding as soon as it is removed from the oven so that it can soak in. 

For the ganache

1 Add all the ingredients in to one bowl, and mix through until incorporated. Serve with the malva pudding. 

 

Chocolate-crusted cauliflower 

Prep time 15 min 

Cook time 1 hr 10 minutes 

Serves 4–6 

INGREDIENTS

For the crumb

3 tbsp butter, melted

1 cup dark rye bread crumbs

1 lemon zested

cup parmesan

cup cacao powder

3 sprigs thyme, stem removed

1 tsp dry oregano

Salt and pepper, to taste

For the cauliflower

1 large head cauliflower

2 tbsp olive oil, to rub

Salt and pepper, to season

2 eggs, whisked, to coat

 

 

 

 

 

 

 

 

 

 

 

METHOD

For the cauliflower

1  Preheat the oven to 180°C.

2 Place the cauliflower in a cake pan and rub with oil and season. Roast in the oven for an hour until tender. 

For the crumb

1 Meanwhile, prepare your crumb by mixing all the ingredients in a bowl. Set aside. 

2 Once the cauliflower is cooked, dredge it in the eggs, followed by a dip in the bread crumb mixture.

3 Change the oven to the grill setting and transfer the crusted cauliflower into the oven to brown for 5–10 minutes. Cut into slices and serve. 

 

Chocolate bbq basting sauce 

Prep time 10 min

Cook time 10 min

Serves 6 

INGREDIENTS

1 onion, chopped

tsp chilli powder

cup chicken stock

cup tomato sauce

1 lime, zested and juiced

cup worcestershire sauce

1 tbsp brown sugar

1 tbsp cocoa powder

Salt and pepper, to taste

50g dark chocolate (70-99%), melted

 

 

 

 

 

 

 

METHOD

1 In a large saucepan, over medium heat, saute the onions together with the chilli powder for 5 minutes until soft, then add the rest of the ingredients, except for the chocolate. 

2 Bring the sauce to a boil until thick, lower the heat and allow the sauce to simmer for 5 minutes.

3 Remove from the heat, add the chocolate and stir until smooth.
