CHICKPEA TART
Serves 6
INGREDIENTS
For the base
1 cup oat bran / cup pumpkin
seeds, toasted / 2 cups sun-dried tomatoes / tsp salt / 6 tbsp hot water
For the hummus
2 tins chickpeas, liquid reserved
cup tahini / 1 tsp garlic powder
1 lemon, juiced and zested / tsp cumin, ground / tsp salt
To serve
150 g black olives / Handful parsley, chopped / 4 tbsp pumpkin seeds
METHOD
For the base
1. Blend all the ingredients until a thick paste forms. Press into a tart tin and place in the fridge for 1 hour.
For the hummus
2. Blend all the ingredients with 1 cups of chickpea liquid until smooth. Reserve cup of the chickpeas.
3. To serve, spoon hummus into base. Garnish with ripped olives, parsley and pumpkin seeds and reserved chickp
BANANA BREAD RAWNOLA
Serves 6
INGREDIENTS
1 banana / 1 tbsp cinnamon
5 tbsp water / tsp salt
4 cups oats / cup pecan nuts, chopped / 5 tbsp honey
METHOD
1. Blend the banana, cinnamon, water and salt.
2. Fold the banana mixture through the oats and pecans.
3. Drizzle in the honey and mix until clumps form.
4. Place in the fridge to set for 1 hour.
5. Serve with milk of your choice.
SPICED CHOCOLATE MOUSSE
Serves 6
INGREDIENTS
6 bananas / 2 avos, peeled and chopped / 1 cup cocoa powder
12 tbsp honey / tsp cardamom
tsp cinnamon / tsp chilli powder
tsp allspice / 6 eggs, separated
To serve
1 tbsp salt / 4 tbsp white
sesame seeds
METHOD
1. Blend all the ingredients exceptthe egg whites until smooth.
2. Whip the egg whites in a separate bowl and gently fold through the chocolate mixture.
3. Spoon into cups and dust with cocoa, allow to set in the fridge for 1 hour.
4. To serve, sprinkle over salt and sesame seeds.
