CAULIFLOWER FRITTERS WITH SOUR CREAM AND CHIVE DIP
Serves 4
INGREDIENTS
For the fritters
1 large head cauliflower, cut into florets ½ cup flour 1 tsp paprika 1 spring onion, chopped 1 clove garlic, grated |
2 eggs
Salt and pepper Vegetable oil To serve 1 cup sour cream Handful chives, chopped |
METHOD
For the fritters
1. In a large pot, partially cook the cauliflower in salted water, allowing it to boil for 3–5 minutes, then drain.
2. Pulse all the ingredients in a food processor until combined, then transfer to a bowl.
3. Lightly coat a non-stick pan with oil. Fry spoonfuls of the batter on a medium to high heat for 3 minutes, while flattening each side, until golden
4. Mix the sour cream and chives.
5. Serve fritters with chopped chives and sour cream.
