Lemon and mint green iced tea
Makes 1L // Total time 15 minutes (plus refrigeration)
Ingredients
1L boiling water
2 teabags green tea
6 mint leaves, plus extra to garnish
2 lemons, sliced, plus extra to garnish
2 Tbsp honey
Ice
Method
- Combine the teabags, lemon and mint then pour boiling water over
- Add the honey and stir to dissolve.
- Set aside and allow to infuse for 5 minutes, then remove the teabags and refrigerate until cold.
- Top up with water to taste.
- Serve poured over ice and garnished with lemon slices and mint.

Healthy green tea and basil G&T
Makes 4 // Cooking time 10 minutes
Ingredients
2 green tea bags
Handful fresh basil leaves
4 Tbsp honey
Zest and juice of 1 lemon
½ cup gin
For serving
2 cups ice
Handful basil
1 lemon, zested with a potato peeler
Method
- Brew the tea in 3 cups of hot water.
- Add basil, honey and lemon zest. Allow to cool.
- Strain tea mixture into a jug and add lemon juice and gin.
- To serve, place ice, basil and lemon zest in 4 glasses and pour cocktail over.

Berry iced tea lollies
Makes 8 // Cooking time 10 minutes, plus overnight freezing
Ingredients
2–3 berry teabags
3–4 Tbsp sugar
Handful mint leaves
2 cups boiling water
Handful mint leave, plus extra for freezing
Method
- Steep teabags, sugar and mint in boiling water for 5–8 minutes. Remove teabags and cool to room temperature.
- Place a few mint leaves in each lolly mould. Pour in the tea.
- Insert sticks and freeze overnight.
