Think Inside the ‘Lunch box’

Delicious packed lunch box meals for your next road trip, day outing or picnic.

Picnic jars with Caramelised onion dip and tomato salsa

SERVES 6

INGREDIENTS

For the onion dip
2 tbsp vegetable oil
onions, chopped
2 garlic cloves, finely chopped
1 cup sour cream
3 tbsp mayonnaise
2 tbsp chopped parsley
For the tomato salsa
3 tomatoes, finely chopped
¼ red onion, finely chopped
1 jalapeño, thinly sliced
2 tbsp chopped basil
2 tbsp olive oil
1 tbsp lemon juice
To serve
½ cucumber, cut into matchsticks
18 baby carrots
Handful cheese straws or breadsticks

METHOD
For the onion dip
1. Heat the oil in a pan over medium-low heat. Add the onions and cook until soft, translucent and just starting to caramelise. Add the garlic and fry for another 3–5 minutes.
2. Remove from the heat and allow to cool.
3. Once the onions are cool, mix them together with the remaining ingredients and season with salt and pepper to taste.
For the tomato salsa
1. Mix all the ingredients in a bowl and season generously with salt and pepper.
To serve 
1. Serve the dip and salsa with cucumber sticks, baby carrots and cheese straws or breadsticks on the side.

 

BLT Sandwich Skewer

MAKES 16

INGREDIENTS
For the skewers
1 tbsp vegetable oil
8 slices bacon
8 slices bread, toasted and quartered
wheels feta, cubed
16 small lettuce leaves
16 baby tomatoes
For the dipping sauce
½ cup yoghurt
3 tbsp mayonnaise
3 tbsp tomato sauce
To serve
16 short wooden skewers
4 pears

METHOD
For the skewers
1. Heat the oil in a pan over medium heat and fry the bacon until cooked.
2. Remove from the heat, drain the bacon on a paper towel and cut each slice in half.
3. Thread a square of toast onto each wooden skewer. Fold the bacon in half and thread onto the skewer, followed by a block of feta, a lettuce leaf and one baby tomato. Finish the skewer with another square of toast.
For the sauce
1. Mix all the ingredients in a bowl. Place in four resealable containers.
To serve
1. Pack 4 skewers, a container of dipping sauce and your child’s favourite fruit into their lunch box.
