Banging Burgers

Whether it’s chicken or beef, these are mouth-watering burgers that will have you savouring every bite.

SOUTHERN FRIED CHICKEN BURGERS WITH SLAW

Serves 4 

Prep time 1 hour 

Cook time 30 min

INGREDIENTS

For the fried chicken

2 cups buttermilk

2 tbsp Cajun spice

4 chicken breasts

2 cups flour

1 tbsp baking powder

1 tbsp garlic powder

Vegetable oil, to fry

 

To assemble

4 burger buns, halved and toasted

For the slaw

½ green cabbage, thinly sliced

3 spring onions, thinly sliced

3 celery stalks, thinly sliced

½ bulb fennel, thinly sliced

2 jalapeños, thinly sliced

2 tbsp mayonnaise

Zest and juice of 1 lime

2 tbsp roughly chopped coriander

2 tsp red-wine vinegar

 

 

 

 

 

 

 

 

 

 

 

 

 

METHOD

For the fried chicken

1. Preheat oven to 180°C. Line a baking tray with tin foil. 

2. Mix together the buttermilk and Cajun spice. Add the chicken, turning to ensure it’s well coated, and allow to marinate for at least 1 hour. 

3. Combine the remaining ingredients in a large bowl to make the dry coating. 

4. Dip the marinated chicken in the dry coating, then into the marinade, and then into the dry coating again. 

5. Heat enough vegetable oil in a pan to shallow fry. Fry each chicken breast for 4 minutes per side. Transfer to the prepared baking tray and bake for 10 minutes. 

For the slaw

1. Combine all the ingredients and refrigerate for at least 20 minutes before assembling your burgers. 

To assemble

1. Top each burger bun with a piece of fried chicken, followed by a generous heap of slaw. Close and dig in.

 

 

MAPLE BACON BURGERS 

Serves 4 

Prep time 15 min 

Cook Time 35 min

INGREDIENTS

For the burger patties

500 g beef mince

1 tbsp breadcrumbs

2 tsp dried thyme

For the maple bacon

400 g streaky bacon, chopped

2 garlic cloves, grated

1 tsp paprika

2 cups apple juice

½ cup maple syrup

To assemble

4 burger buns, halved and toasted

1 cup baby spinach

1 wheel Camembert, sliced

 

 

 

 

 

 

 

 

METHOD

For the burger patties

1. Using your hands, combine all the patty ingredients and divide into 4 pieces. Mould each one into a 3 cm thick burger patty. 

2. Heat some oil over high heat and cook for burgers for 5 minutes on each side. Lower the heat, season, cover with a lid and cook for another 10 minutes. 

For the maple bacon

1. Fry the bacon over high heat for 5 minutes, until crispy.  Lower the heat, add the garlic and paprika. Fry for 2 minutes, until fragrant. 

2. Deglaze the pan with the apple juice. Add the maple syrup and allow to reduce at a simmer for 15 minutes. 

To assemble

1. Top the bottom half of the buns with baby spinach, followed by a beef patty and a slice of Camembert. Finish with a generous drizzling of maple bacon.
