Creative Fruit Recipes For Summer

BERRY ICE LOLLY COCKTAILS 
Prep time 15 min
Makes 4

INGREDIENTS
1 cup mixed berries
1 cup lemonade or lemon soft drink
cup cranberry juice
750 ml sparkling white wine

METHOD
1 Mix the berries, lemonade and cranberry juice. Pour this into ice-lolly moulds and freeze overnight. 
2 To serve, place the ice lollies in glasses and fill up with sparkling wine. 
3 Stir to infuse the lollies in the wine.

GRILLED PEACH AND HALLOUMI STEAKS 
Prep time 10 min
Cook time 10 min
Serves 4

INGREDIENTS
4-6 nectarines
2 blocks halloumi cheese
3 tbsp honey
3 tbsp olive oil

METHOD
1 Slice each nectarine into 12 wedges. Cut the halloumi into 8 slices.
2 In a pan on high heat, fry the nectarine wedges in honey for 3 minutes to soften.
3 Heat up a griddle pan and brush with oil. Grill the halloumi slices until char lines have formed on them.
4 To build your steak, layer 3-4 slices of nectarine in between 2 halloumi slices. Repeat with remaining ingredients. This may be served as a snack with a dip and crackers, in a grilled sandwich or as a burger. 

To melt cheese completely, place your steaks in the oven for 5–8 minutes on 180 °C

Pineapple and chilli fried rice boats
Prep time 20 min
Cook time 15 min
Serves 4

INGREDIENTS
3 cups cooked basmati rice
3 tbsp olive oil
1 garlic clove, diced
2 red chillies, deseeded and finely sliced, plus extra for serving 
2 eggs, beaten, optional 
2 pineapples, halved and hulled.
Reserve the 4 shells for serving. 
To serve
Hulled pineapple, diced
4 fried eggs 
Handful mint
Coconut flakes

METHOD
1 Cook the rice according to packet instructions. In a pan on medium to high heat, heat the oil, garlic and chillies.
2 Once it starts to sizzle, add 1 cup of cooked rice at a time. 
Fry for 3 minutes before adding more. At this stage add the 2 beaten eggs for an egg fried rice dish.
3 Once all the rice is fried and crispy, spoon it into the pineapple bowls and serve with diced pineapple, a fried egg on each boat, mint and coconut flakes.
