Recipe: The South African Sandwich

Ingredients
1 cup tinned butter beans, rinsed and drained
 3 tbsp plain yoghurt
 2 tbsp chopped Peppadews, plus extra to serve
 Salt and pepper
 4 slices white bread
 1 baby marrow, ribboned
 2 tbsp vegetable oil

METHOD

1. Mash the butter beans with a fork. Mix with yoghurt, chopped Peppadews, salt and pepper.

2. Spread some butter-bean mash on each slice of bread. Cut each slice in half and sandwich together. Wrap 2 baby marrow ribbons around each sandwich and secure with a toothpick.

3. Heat oil in a pan and fry sandwiches on both sides until golden. Serve with extra Peppadews.
