For the pickled cucumber |

1 cucumber | 2 cups butter beans, cooked | 1 clove garlic, minced |
¼ cup vinegar | ¼ cup flour, plus extra | ½ cup mayonnaise |
3 tbsp sugar | ½ lemon, zested and juiced | 4 hamburger rolls, toasted |
Pinch salt | 1 clove garlic | 1 avo, sliced |
½ tsp chilli flakes | Handful watercress | |
1 egg | ||
Salt and pepper, to taste | ||
Handful parsley | ||
¼ cup oil, for frying |
Method
For the pickled cucumber
1. Slice the cucumber in ribbons and place in a bowl.
2. Mix the vinegar, sugar and salt.
3. Pour vinegar mixture over the cucumber ribbons and place in the fridge for 1 hour.
For the patties
1. Preheat oven to 180°C.
2. Blend all ingredients until chunky. Mold into patties and lightly coat with flour. Place in fridge for 30 minutes.
3. Fry the patties in oil until golden; finish them off in the oven by baking them for 10 minutes.
To serve
1. Mix the garlic into the mayonnaise and spread in on the base of the rolls. Top with a bean patty, a few ribbons of cucumber, a few avo slices avo and a handful of watercress.
