The pita burger with cauliflower steaks is a different, more healthier approach to the classic burger.

For the cauliflower steaks | To serve | |
1 cauliflower head | 1 tbsp cumin | 4 pita breads, toasted |
½ cup tbsp olive oil | ½ tbsp coriander | Hummus |
2 cloves garlic, grated | 1 tsp smoked paprika | Baby spinach leaves |
½ tsp salt | 1 tsp cayenne | 1 can chickpeas, drained |
4 tbsp honey or syrup | Lemon juice & zest | |
Handful fresh parsley, chopped | ||
METHOD
For the cauliflower steaks
1. Cut the cauliflower into 4 steaks and drizzle with olive oil.
2. Rub in the rest of the ingredients and allow to marinade for 10 minutes.
3. Place the cauliflower steaks in a non-stick pan on low to medium heat and fry for 5 minutes on each side.
To serve
1. Cut the toasted pitas in half, and make pockets in each. Add a dollop of hummus, followed by the spinach, cauliflower steaks, and chickpeas. Finish with a squeeze of lemon juice and parsley.
